Spinach Bacon Quiche

Here's another delightful crustless quiche, although it can just as easily be made in a pie crust. A stash of frozen chopped spinach is great to have on hand for many recipes such as quiches or Italian dishes. Freshly cooked and chopped spinach can also be used. 

I also keep pre-cooked bacon slices in the freezer.  About once a month or so, I fry or bake a pound or two then store in a freezer bag.  It saves time for breakfast and preparing many dishes calling for cooked bacon.


Quiches are delicious for breakfast, lunch or dinner!  I make them two or three times a month for dinner, then leftovers provide another day or two of breakfasts or lunches.  And they freeze and/or reheat easily.


Add a "decked out" salad for a delightful meal!

Spinach Bacon Quiche
3 eggs
1 cup milk
1 tsp. salt
1 tsp. baking powder
1/2 cup biscuit mix
6 oz. or more of shredded cheddar cheese, 2 cups
1/4 cup diced onion
1, 10  oz. pkg. drained frozen spinach
1, 4 oz. can drained mushroom slices
1/2 cup diced cooked bacon

Spray a 9-inch deep pie pan. Preheat oven to 350.

In a 2-quart bowl beat eggs, add milk, biscuit mix, salt, and baking powder, mixing well. Add cheese, spinach, onions, bacon and mushrooms. Mix and combine all. Pour into 9-inch pie dish and bake for 40-45 minutes until set and golden on top. An inserted knife in center should come out out clean. Serves 6-8.

Estimated cost: $4.25 or less; .70 cents a serving or less.

Bacon Quiche

Quiches are easy, fast and economical to make.  There's endless possibilities for being creative once learning the basics.  Quiches are basically eggs, cheese and milk combined with a cup or two of added cooked veggies or meat.  

Some are crustless, while others call for a pastry shell. Baked at 375 - 400 for 35-45 minutes until set.  (170 degrees in middle, if testing with a thermometer)

As a rule of thumb use: 1/2 cup of dairy (milk or cream), 1/4 cup of grated cheese and 1/4 teaspoon of salt for each egg.  To make a crustless quiche, grease or spray a pie plate, and combine a 1/2 to one cup of Bisquick into dairy mixture which helps it set up firm for slicing.



Bacon Quiche
Golden Brown Ready to Serve
1  pound of chopped, cooked bacon
1 cup of shredded cheese of choice
1/2 cup of cooked chopped onion
2 cups milk
1 cup Bisquick
4 eggs
Salt and pepper to taste
(Optional): sprinkle top with parsley or dry herbs, such as Italian blends, paprika, chives.

Heat oven to 400.
Combine all ingredients in bowl, mix well.
Pour into greased 9-inch pie plate
Bake 35 - 40 minutes until puffed up and golden brown. Let set a few minutes to cool and set. Serves 6-8

To save on the cost of bacon, buy bulk bacon ends and pieces. Ends and pieces are handy for soups, chowders, quiches, and garnishes.

* Good for breakfast, lunch, or dinner.  Extra servings can be frozen and ready anytime by reheating.

Estimated cost: $5.00 or less; .83 cents a serving or less.

Artichoke and Crab Quiche

Artichoke Crab QuicheI often make quiche and have collected recipes for years.  This one can be made with fresh or canned crab meat. I've even tried it with imitation crab with success, but fresh crab is in season now where I live, so we recently enjoyed this for dinner.  


Watching carbs, I make a crustless version, and serve with a "decked out" salad. The herb spring mix lettuce so available in stores these days is very attractive on a plate with added goodies such as sliced radishes, green onion, tomato slices, a sprinkling of cheese, a few croutons, and in this case a few sliced artichoke hearts.


Leftovers are a welcomed breakfast or lunch,  just reheat and serve.

Artichoke and Crab Quiche
1 pie crust shell
1 cup artichoke hearts cut up
1 cup flaked crab meat, about a cup
1/3 cup diced onions or green peppers
4 eggs
2 cups half and half, or milk
1 cup shredded cheese of choice - Swiss, cheddar, provolone
2 tsps. dried dill
salt and pepper
Note: for crustless quiche use 1/2 cup biscuit mix whisked in with egg and milk
Preheat oven to 350. Serves 6

Uploaded from the Photobucket iPhone AppFor pie crust quiche, place crust in pie plate and bake 10 minutes to crisp up so it won't become soggy later when adding wet ingredients. For crust-less quiche, spray or grease pie plate.

Mix artichoke, crab and onions/peppers, then spread on bottom of dish or crust.

Whisk eggs and half and half until blended and then mixed in cheese, dill and seasoning. Pour over artichokes and crab - bake at 350 for about 40 minutes until browned and firm in middle to touch, or insert toothpick or knife until it comes out clean.

Estimated cost per serving: $1.25 or less.
